  1. 1. Heat the crème fraîche in a pot and melt the chopped chocolate in it. Add the rum and butter and mix well. Then chill the mixture until it is firm but still moldable.
  2. 2. Place a large shallow bowl in the freezer compartment.
  3. 3. Spread the cocoa evenly on a shallow plate.
  4. 4. With cool hands, form small balls from the chocolate mixture, roll them in the cocoa, and place them on the chilled plate. The cold truffles can be packaged as a gift if desired.
