🍽️ Fruity grape salad with chicken and crunchy vegetables

Ingredients
- 2 sprigs dill
- 2 sprigs parsley
- 400 g chicken breast fillet
- 1 tbsp vegetable oil
- 1 roll
- 300 g carrots
- 200 g apples
- 200 g light seedless grapes
- 200 g dark seedless grapes
- 150 g celery
- 300 g chicory
- salt
- pepper
- 50 ml olive oil
- 50 ml white wine vinegar
Instructions
- 1. Preheat the oven to 200 degrees Celsius with fan setting.
- 2. Thoroughly wash the dill and parsley sprigs and let them drain well.
- 3. Rinse the chicken breast fillets and pat them dry with kitchen paper.
- 4. Cut the chicken meat into strips about 1 centimeter wide.
- 5. Heat some oil in a pan and fry the chicken strips for approx. 2 minutes.
- 6. Remove the pan from the heat and keep the meat warm.
- 7. Slice the bread roll into paper-thin slices using a bread slicer.
- 8. Toast the bread slices in the preheated oven for 10 to 15 minutes until golden brown.
- 9. Wash the vegetables thoroughly and remove the tough stems.
- 10. Cut the carrots, apples, and chicory into thin strips.
- 11. Cut the celery stalks into small rings.
- 12. Wash the grapes and halve them.
- 13. Mix the salad with olive oil and white wine vinegar.
- 14. Finally season the marinade to taste with salt and pepper.
- 15. Set aside the still warm chicken strips.
- 16. Mix the finished salad with the fresh herbs.
- 17. Plate the salad.
- 18. Garnish the dish with the toasted bread slices.
