🍽️ Fresh Grape Jelly

Ingredients
- 1.2 kg red seedless grapes
- 200 ml red wine (e.g. Pinot Noir)
- 1 unwaxed orange
- 2 cardamom pods
- 1 kg jam sugar
- 40 ml grappa
Instructions
- 1. Rinse the grapes thoroughly under running water.
- 2. Remove all stems from the berries.
- 3. Place the cleaned grapes into a pot.
- 4. Lightly crush the fruits using a potato masher.
- 5. Pour the wine into the pot with the grapes.
- 6. Heat the mixture until it boils.
- 7. Reduce the heat to a low setting.
- 8. Let the jelly simmer gently for about 20 minutes.
- 9. Wait until the fruits are soft and broken down.
- 10. Rinse the orange thoroughly with hot water.
- 11. Slice the orange into thin rounds.
- 12. Add the orange slices and cardamom to the grape mixture.
- 13. Let the entire mixture cool down.
- 14. Place a clean cloth into a sieve.
- 15. Pour the cooled mixture through the cloth-lined sieve.
- 16. Let the juice drip through slowly.
- 17. Catch the juice in a clean pot.
- 18. Squeeze the remaining fruit pulp in the cloth well.
- 19. Measure the amount of collected juice.
- 20. Add the same amount of sugar to the juice.
- 21. Heat the mixture while stirring continuously.
- 22. Bring the mixture to a boil.
- 23. Let the jelly boil vigorously for about 5 minutes.
- 24. Perform a gel test to check the consistency.
- 25. Stir the grappa into the hot jelly.
- 26. Pour the jelly immediately into prepared jars.
- 27. Seal the jars immediately.
- 28. Let the jars cool down at room temperature.
