  2. 2. Pat the grapes dry with a kitchen towel.
  3. 3. Remove the individual berries from the stems.
  4. 4. Set aside four small grape clusters for decoration.
  5. 5. Place the four small clusters in the freezer.
  6. 6. Let the clusters freeze for about 30 minutes before serving.
  7. 7. Slice the vanilla pod lengthwise.
  8. 8. Scrape out the vanilla seeds with a spoon.
  9. 9. Put the juice, sugar, honey, and lemon juice into a pot.
  10. 10. Add the vanilla seeds and the grapes.
  11. 11. Bring the mixture to a boil.
  12. 12. Let the mixture cool down.
  13. 13. Press the cooled mixture through a fine sieve.
  14. 14. Whip the egg whites until stiff.
  15. 15. Gently fold the egg whites into the grape mixture.
  16. 16. Pour the mixture into a frozen bowl.
  17. 17. Place the bowl in the freezer.
  18. 18. Beat the mixture regularly with a whisk.
  19. 19. This prevents the formation of ice crystals.
  20. 20. Let the ice cream set for about 3 hours.
  21. 21. Scoop out balls with an ice cream scoop.
  22. 22. Place the ice cream balls on decorative dessert bowls.
  23. 23. Garnish the ice cream with the frozen grapes.
