🍰 Fresh Grape Ice Cream

Ingredients
- 400 blue grapes
- 0.5 vanilla pod
- 100 ml red grape juice
- 80 g sugar
- 2 tbsp honey
- 0.5 unpeeled lemon (juice)
- 2 egg whites
Instructions
- 1. Wash the grapes thoroughly.
- 2. Pat the grapes dry with a kitchen towel.
- 3. Remove the individual berries from the stems.
- 4. Set aside four small grape clusters for decoration.
- 5. Place the four small clusters in the freezer.
- 6. Let the clusters freeze for about 30 minutes before serving.
- 7. Slice the vanilla pod lengthwise.
- 8. Scrape out the vanilla seeds with a spoon.
- 9. Put the juice, sugar, honey, and lemon juice into a pot.
- 10. Add the vanilla seeds and the grapes.
- 11. Bring the mixture to a boil.
- 12. Let the mixture cool down.
- 13. Press the cooled mixture through a fine sieve.
- 14. Whip the egg whites until stiff.
- 15. Gently fold the egg whites into the grape mixture.
- 16. Pour the mixture into a frozen bowl.
- 17. Place the bowl in the freezer.
- 18. Beat the mixture regularly with a whisk.
- 19. This prevents the formation of ice crystals.
- 20. Let the ice cream set for about 3 hours.
- 21. Scoop out balls with an ice cream scoop.
- 22. Place the ice cream balls on decorative dessert bowls.
- 23. Garnish the ice cream with the frozen grapes.
