  1. 1. Peel the bottom third of the asparagus stalks.
  2. 2. Bring salted water to a boil and cook the asparagus in it for about 8 minutes until almost tender.
  3. 3. Immediately shock the asparagus with cold water to keep its color.
  4. 4. Drain the water and cut the stalks in half crosswise.
  5. 5. Preheat the oven to 220 degrees using the top and bottom heat setting.
  6. 6. Divide the tramezzini breads into three equal parts each.
  7. 7. Spread a thin layer of crème fraîche onto the bread slices.
  8. 8. Sprinkle about two-thirds of the cheese amount over the bread.
  9. 9. Place a piece of asparagus on each slice.
  10. 10. Roll the breads up tightly.
  11. 11. Press the edges of the roll firmly so they do not open.
  12. 12. Place the roll seam-side down on a baking sheet lined with baking paper.
  13. 13. Sprinkle the top with the remaining cheese.
  14. 14. Bake the tramezzini for about 10 minutes in the oven until crispy and golden brown.
  15. 15. Take the buns out of the oven.
  16. 16. Let them cool on a wire rack.
  17. 17. Serve the tramezzini still lukewarm or completely cooled.
