🍽️ Tuscan Bean Salad with Tuna

Ingredients
- 500 g green beans (can; drained weight)
- salt
- 500 g tomatoes
- 300 g tuna in its own juice (can; drained weight)
- 2 sprigs oregano
- 2 sprigs parsley
- 1 onion
- 100 ml vegetable broth
- 3 tbsp vinegar
- 2 tsp mustard
- pepper
- 4 tbsp olive oil
- 2 garlic cloves
Instructions
- 1. Place the beans in a colander, rinse under cold water and drain well. Wash the tomatoes, remove the stems and cut into quarters or eighths. Drain the tuna and flake with a fork. Peel the onion and slice into thin rings.
- 2. Thoroughly wash the oregano and parsley, shake off excess water, pluck off the leaves and chop finely. Peel the garlic and slice into thin pieces. Mix all ingredients well with broth, vinegar, mustard, salt, pepper and olive oil.
- 3. Toss the Tuscan bean salad with tuna with the dressing and serve, for example, with toasted garlic baguette.
