  1. 1. Rinse the chicken under cold water and pat it dry with a kitchen towel.
  2. 2. Season the meat with salt and pepper.
  3. 3. Wash the peppers and cut them in half lengthwise.
  4. 4. Remove the seeds and cut the flesh into strips or bite-sized pieces.
  5. 5. Wash the spring onions and slice them into thin rings.
  6. 6. Heat oil in a hot grill pan.
  7. 7. Fry the chicken breasts for about 4 minutes on each side.
  8. 8. Remove the meat from the pan and wrap it in aluminum foil.
  9. 9. Fry the pepper pieces in the same pan, turning occasionally, for about 2 minutes.
  10. 10. Add the spring onions and fry them briefly.
  11. 11. Season the vegetables with salt, pepper, and a splash of lime juice.
  12. 12. Stir the parsley into the vegetables.
  13. 13. Slice the chicken breast into thin strips.
  14. 14. Warm the tortillas in a dry pan.
  15. 15. Fill the tortillas with the chicken and vegetables.
  16. 16. Drizzle sweet chili sauce over them.
  17. 17. Roll up the tortillas and serve.
