🍽️ Crispy Tortilla Bites with Bean Cream, Avocado Dip, and Fresh Salsa

Ingredients
- 1 can Kidney beans
- 1 Onion (finely chopped)
- 150 ml Vegetable stock
- 1 tsp Cumin
- Salt
- Pepper (freshly ground)
- Vegetable oil
- 1 kg ripe Tomatoes
- 1 red Onion
- 2 Garlic cloves
- 2 Chili peppers
- Salt
- Pepper (freshly ground)
- 1 Lime (juice)
- 4 tbsp Olive oil
- 1 tbsp Coriander (finely chopped)
- Tortilla chips (ready-made)
- 2 Avocados
- 50 g Yogurt
- 2 Garlic cloves
- 1 unwaxed Lemon
- Salt
- white Pepper (freshly ground)
Instructions
- 1. Peel the avocados and cut them in half lengthwise.
- 2. Remove the pits and roughly chop the flesh.
- 3. Place the avocado flesh, yogurt, and peeled garlic cloves into a blender.
- 4. Blend the mixture until smooth.
- 5. Finely grate the lemon zest.
- 6. Cut the lemon in half and squeeze out the juice.
- 7. Stir the lemon zest into the avocado cream.
- 8. Add the lemon juice and season with salt and pepper to taste.
- 9. Heat 2 tablespoons of oil in a pan.
- 10. Chop the onions and sauté them in the hot oil until soft and translucent.
- 11. Drain the beans and reserve the liquid from the can.
- 12. Place the beans, onions, 100 milliliters of bean liquid, and vegetable stock into the blender.
- 13. Blend everything into a smooth bean puree.
- 14. Season the puree with cumin, salt, and pepper.
- 15. Score the tops of the tomatoes in a cross shape.
- 16. Place the tomatoes briefly in boiling water to blanch them (cook briefly in boiling water).
- 17. Remove the tomatoes and peel off the skin.
- 18. Finely dice the deseeded tomatoes.
- 19. Peel the onions and garlic.
- 20. Remove the seeds from the chilies.
- 21. Finely chop the onions, garlic, and chilies.
- 22. Mix the chopped vegetables with the diced tomatoes.
- 23. Season the salsa with salt, pepper, lime juice, and oil.
- 24. Chop the cilantro leaves and stir them in.
- 25. Cover the salsa and refrigerate for at least 2 hours.
- 26. Top each tortilla chip with one teaspoon of bean paste.
- 27. Add one teaspoon of guacamole.
- 28. Add one teaspoon of salsa.
- 29. Serve the bites with a cold beer.
