  2. 2. Carefully separate the meat from the bones.
  3. 3. Tear the chicken meat into fine, short strips.
  4. 4. Drain the jalapeños well.
  5. 5. Finely chop the jalapeños.
  6. 6. Grate both types of cheese coarsely.
  7. 7. Wash the cilantro thoroughly.
  8. 8. Shake the cilantro dry.
  9. 9. Pluck the small cilantro leaves from the stems.
  10. 10. Wash the spring onions.
  11. 11. Remove the tough ends of the spring onions.
  12. 12. Slice the spring onions into very thin rounds.
  13. 13. Place all prepared ingredients into a large bowl.
  14. 14. Mix the ingredients in the bowl well.
  15. 15. Distribute the filling evenly over three tortilla wraps.
  16. 16. Place the remaining tortilla wraps on top.
  17. 17. Press the sandwiches firmly together.
  18. 18. Preheat a non-stick pan over medium heat.
  19. 19. Fry the tortilla wraps one after the other in the pan.
