🍽️ Beef Tortilla with Peppers and Strawberry Twist

Ingredients
- 450 g rump steak
- 2 red onions
- 3 garlic cloves
- 1 bulb fennel
- 1 yellow bell pepper
- 250 g strawberries
- 1 small white onion
- 1 red chili pepper
- 2 ripe avocados
- 1 lime
- 10 g cilantro (0.5 bunch)
- salt

- 8 whole wheat tortilla wraps
- 2 tbsp olive oil
- 60 g hummus (chickpea puree, jar; 4 tbsp)
- 80 g sour cream (4 tbsp)
Instructions
- 1. Pat the meat dry with kitchen paper and cut it into strips.
- 2. Remove the fat edge from the meat.
- 3. Peel the red onion and cut it into strips as well.
- 4. Peel the garlic and chop it finely.
- 5. Wash the fennel and cut it in half lengthwise.
- 6. Remove the hard core from the fennel.
- 7. Cut the fennel crosswise into thin strips.
- 8. Wash the bell pepper and cut it in half.
- 9. Remove the seeds from the bell pepper.
- 10. Cut the bell pepper into strips.
- 11. Wash the strawberries and remove the green tops.
- 12. Slice the strawberries.
- 13. Peel the white onion and chop it finely.
- 14. Wash the chili pepper and remove the seeds.
- 15. Dice the chili pepper very finely.
- 16. Peel the avocados and cut them in half lengthwise.
- 17. Remove the pits from the avocados.
- 18. Separate the avocado flesh from the skin.
- 19. Cut the lime in half and squeeze out the juice.
- 20. Wash the coriander and shake it dry.
- 21. Finely chop the coriander leaves.
- 22. Puree the avocados with the lime juice and coriander in a blender.
- 23. Transfer the avocado puree to a bowl.
- 24. Stir the onion and chili cubes into the puree.
- 25. Season the guacamole with salt and pepper.
- 26. Warm the tortilla wraps in the oven according to the package instructions.
- 27. Heat one tablespoon of oil in a pan.
- 28. Sear the meat over high heat for about two minutes.
- 29. Remove the meat from the pan and set it aside.
- 30. Add the remaining oil to the pan.
- 31. Sauté the onions, garlic, fennel, and bell peppers over medium heat for about five minutes.
- 32. Return the meat to the pan.
- 33. Let the meat cook for another two minutes.
- 34. Gently fold the strawberries into the mixture.
- 35. Spread hummus onto the tortilla wraps.
- 36. Top the tortillas with the filling.
- 37. Fold the tortillas in half.
- 38. Serve the tortillas on four plates.
- 39. Serve the guacamole and sour cream on the side.
