🍽️ Spanish Potato Tortilla

Ingredients
- 500 g floury potatoes
- 1 onion
- 1 clove garlic
- 3 tbsp olive oil
- 6 eggs
- 100 g whipping cream
- 50 g mixed chopped herbs
- salt
- pepper (from the mill)
- nutmeg
Instructions
- 1. Peel the potatoes and wash them thoroughly.
- 2. Slice the potatoes into thin rounds.
- 3. Peel the onions and the garlic.
- 4. Finely chop the onions and the garlic.
- 5. Heat half of the olive oil in a frying pan.
- 6. Fry the potato slices over medium heat for about 25 minutes.
- 7. Stir occasionally while frying.
- 8. Add the onions and garlic during the last 10 minutes.
- 9. Season the mixture with salt and pepper.
- 10. Remove the pan from the heat and transfer the potatoes to a bowl.
- 11. Let the potatoes cool down for a short while.
- 12. Whisk the eggs with the cream and the herbs.
- 13. Season the egg mixture with salt, pepper, and nutmeg.
- 14. Pour the egg mixture over the cooled potatoes.
- 15. Gently mix the ingredients together.
- 16. Heat the remaining olive oil in the same pan.
- 17. Return the potato-egg mixture to the pan.
- 18. Let the tortilla set for about 6 minutes.
- 19. Support the tortilla with a plate and flip it over.
- 20. Slide the flipped tortilla back into the pan.
- 21. Finish frying the tortilla for another 4 to 6 minutes.
