  3. 3. Peel the onions and the garlic.
  4. 4. Finely chop the onions and the garlic.
  5. 5. Heat half of the olive oil in a frying pan.
  6. 6. Fry the potato slices over medium heat for about 25 minutes.
  7. 7. Stir occasionally while frying.
  8. 8. Add the onions and garlic during the last 10 minutes.
  9. 9. Season the mixture with salt and pepper.
  10. 10. Remove the pan from the heat and transfer the potatoes to a bowl.
  11. 11. Let the potatoes cool down for a short while.
  12. 12. Whisk the eggs with the cream and the herbs.
  13. 13. Season the egg mixture with salt, pepper, and nutmeg.
  14. 14. Pour the egg mixture over the cooled potatoes.
  15. 15. Gently mix the ingredients together.
  16. 16. Heat the remaining olive oil in the same pan.
  17. 17. Return the potato-egg mixture to the pan.
  18. 18. Let the tortilla set for about 6 minutes.
  19. 19. Support the tortilla with a plate and flip it over.
  20. 20. Slide the flipped tortilla back into the pan.
  21. 21. Finish frying the tortilla for another 4 to 6 minutes.
