Ingredients
- 400 g potatoes
- 1 bunch spring onions
- 2 tbsp parsley
- 4 garlic cloves
- 250 g shrimp (in brine, well drained)
- 4 tbsp olive oil
- salt
- pepper (from the mill)
- paprika powder (hot)
- 6 eggs
Instructions
- 1. Peel the potatoes and wash them thoroughly.
- 2. Slice the potatoes into thin rounds.
- 3. Wash the spring onions and trim off the tough ends.
- 4. Slice the spring onions into fine rings.
- 5. Peel the garlic cloves.
- 6. Slice the garlic into thin pieces.
- 7. Dice the shrimp into small cubes.
- 8. Heat two tablespoons of oil in a frying pan.
- 9. Fry the potato slices over medium heat for about seven to eight minutes.
- 10. Add the spring onions and garlic to the pan.
- 11. Cook the vegetables for another two minutes.
- 12. Fold the parsley into the potato mixture.
- 13. Season everything with salt, pepper, and paprika powder.
- 14. Whisk the eggs in a separate bowl.
- 15. Lightly salt the beaten eggs.
- 16. Pour the eggs over the potato mixture in the pan.
- 17. Let the omelet set until it is firm.
