🍰 Fresh Tortellini with Tomato Butter

Ingredients
- 350 g semolina flour (or all-purpose flour Type 405)
- 2 eggs
- 1 tbsp olive oil
- salt
- flour (for working)
- 1 mixed herbs (e.g. basil, parsley)
- 250 g cream cheese
- 1 egg
- 1 tsp lemon juice
- 1 pinch lemon zest
- salt
- pepper
- 250 g cherry tomatoes
- 50 g butter
- 1 pinch turmeric
- salt
- pepper
- 2 tbsp chopped parsley
- 2 tbsp chopped basil
- basil (for garnish)
Instructions
- 1. Put flour, eggs, 80 milliliters of water, olive oil, and one teaspoon of salt into a bowl.
- 2. Knead the ingredients into a smooth and elastic dough.
- 3. Shape the dough into a ball.
- 4. Wrap the ball in a kitchen towel.
- 5. Let the dough rest at room temperature for 30 minutes.
- 6. Rinse the herbs under running water.
- 7. Shake the herbs dry.
- 8. Finely chop the herbs.
- 9. Mix the chopped herbs with the cream cheese.
- 10. Separate one egg into yolk and white.
- 11. Set the egg white aside.
- 12. Stir the egg yolk into the cream cheese mixture until smooth.
- 13. Season the filling with lemon juice, lemon zest, salt, and pepper.
- 14. Dust a work surface with flour.
- 15. Roll out the dough with a rolling pin as thinly as possible.
- 16. Cut circles with a diameter of 7 to 8 centimeters from the dough.
- 17. Place one teaspoon of filling in the center of each circle.
- 18. Brush the edges of the dough circles with the egg white.
- 19. Fold the dough circles into half-moons.
- 20. Press the ends of the half-moons firmly together.
- 21. Process the remaining dough in the same way to make tortellini.
- 22. Lightly dust the finished tortellini with flour.
- 23. Set the tortellini aside.
- 24. Bring water to a boil and add salt.
- 25. Cook the tortellini in the boiling salted water for about 5 minutes.
- 26. Remove the tortellini from the heat when they float to the surface.
- 27. Wash the tomatoes.
- 28. Halve some tomatoes and leave others whole.
- 29. Melt the butter in a pan.
- 30. Sauté the tomatoes in the butter for 2 to 3 minutes.
- 31. Season the tomatoes with turmeric, salt, and pepper.
- 32. Toss the tortellini in the brown butter.
- 33. Plate the tortellini.
- 34. Sprinkle the chopped herbs over the tortellini.
- 35. Garnish the dish with basil.
