🍰 Homemade Tortellini with Mushroom and Potato Filling

Ingredients
- 400 g wheat flour
- 4 eggs
- salt
- 1 tbsp olive oil
- 250 g floury potatoes
- 2 garlic cloves
- 150 g porcini mushrooms
- 1 tbsp fresh chopped thyme
- 1 tbsp butter
- 1 egg
- salt
- pepper
- nutmeg
- 1 tbsp cornstarch (add more if needed)
- 40 g butter
- freshly grated parmesan
Instructions
- 1. Pour the flour onto a clean work surface.
- 2. Press a well into the center of the flour with your palm.
- 3. Add the eggs and the olive oil into the well.
- 4. Knead the ingredients together with your hands until you have a smooth dough.
- 5. If the dough seems too dry, add 1 to 2 tablespoons of lukewarm water.
- 6. Shape the dough into a ball.
- 7. Let the dough rest for 30 minutes.
- 8. Wash the potatoes thoroughly.
- 9. Steam the potatoes for about 30 minutes until they are cooked through.
- 10. Peel the cooked potatoes.
- 11. Press the potatoes through a potato ricer.
- 12. Peel the garlic.
- 13. Finely chop the garlic.
- 14. Clean the porcini mushrooms and chop them finely as well.
- 15. Heat butter in a pan.
- 16. Sauté the mushrooms, garlic, and thyme in the hot butter for 1 to 2 minutes.
- 17. Add the egg to the potatoes.
- 18. Mix the mushroom mixture with the potatoes and the egg.
- 19. Check the moisture level of the filling.
- 20. If the mixture is too wet, knead in some starch flour.
- 21. Season the filling with salt, pepper, and nutmeg.
- 22. Lightly flour your work surface.
- 23. Roll out the dough very thinly.
- 24. Cut out round circles with a diameter of 5 to 6 centimeters from the dough.
- 25. Place about 1 teaspoon of filling in the center of each dough circle.
- 26. Fold the dough over the filling to form a half-circle.
- 27. Press the edges firmly together to seal them.
- 28. Wrap each dough pocket around your index finger.
- 29. Press the ends together firmly until a ring shape forms.
- 30. Bring salted water to a boil.
- 31. Add the tortellini to the boiling water.
- 32. Cook the tortellini for about 5 minutes.
- 33. Take some pasta water from the cooking pot.
- 34. Toss the cooked tortellini in hot butter.
- 35. Add a little pasta water to create a sauce.
- 36. Distribute the tortellini onto plates.
- 37. Season them finally with a little pepper.
- 38. Sprinkle the tortellini with shaved Parmesan cheese.
- 39. Serve the dish hot.
