  3. 3. Add the eggs and the olive oil into the well.
  4. 4. Knead the ingredients together with your hands until you have a smooth dough.
  5. 5. If the dough seems too dry, add 1 to 2 tablespoons of lukewarm water.
  6. 6. Shape the dough into a ball.
  7. 7. Let the dough rest for 30 minutes.
  8. 8. Wash the potatoes thoroughly.
  9. 9. Steam the potatoes for about 30 minutes until they are cooked through.
  10. 10. Peel the cooked potatoes.
  11. 11. Press the potatoes through a potato ricer.
  12. 12. Peel the garlic.
  13. 13. Finely chop the garlic.
  14. 14. Clean the porcini mushrooms and chop them finely as well.
  15. 15. Heat butter in a pan.
  16. 16. Sauté the mushrooms, garlic, and thyme in the hot butter for 1 to 2 minutes.
  17. 17. Add the egg to the potatoes.
  18. 18. Mix the mushroom mixture with the potatoes and the egg.
  19. 19. Check the moisture level of the filling.
  20. 20. If the mixture is too wet, knead in some starch flour.
  21. 21. Season the filling with salt, pepper, and nutmeg.

  23. 23. Roll out the dough very thinly.
  24. 24. Cut out round circles with a diameter of 5 to 6 centimeters from the dough.
  25. 25. Place about 1 teaspoon of filling in the center of each dough circle.
  26. 26. Fold the dough over the filling to form a half-circle.
  27. 27. Press the edges firmly together to seal them.
  28. 28. Wrap each dough pocket around your index finger.
  29. 29. Press the ends together firmly until a ring shape forms.
  30. 30. Bring salted water to a boil.
  31. 31. Add the tortellini to the boiling water.
  32. 32. Cook the tortellini for about 5 minutes.
  33. 33. Take some pasta water from the cooking pot.
  34. 34. Toss the cooked tortellini in hot butter.
  35. 35. Add a little pasta water to create a sauce.
  36. 36. Distribute the tortellini onto plates.
  37. 37. Season them finally with a little pepper.
  38. 38. Sprinkle the tortellini with shaved Parmesan cheese.
  39. 39. Serve the dish hot.
