  1. 1. Mound the flour and semolina on your work surface.
  2. 2. Make a well in the center.
  3. 3. Crack the eggs into the well.
  4. 4. Add the olive oil and a pinch of salt.
  5. 5. Knead everything by hand into a smooth dough.
  6. 6. Keep kneading until the dough is elastic and no longer sticks.
  7. 7. Add a little more flour or water if needed.
  8. 8. Wrap the dough in cling film.
  9. 9. Let the dough rest in the fridge for 30 minutes.
  10. 10. Peel the onion and garlic.
  11. 11. Finely dice the onion and garlic.
  12. 12. Sauté the vegetables in hot oil until translucent.
  13. 13. Add the sautéed vegetables and the egg to the minced meat.
  14. 14. Season the filling with salt and pepper.
  15. 15. Divide the dough into smaller portions.
  16. 16. Roll out the dough thinly.
  17. 17. Cut the dough into squares of approx. 6x6 cm.
  18. 18. Place a teaspoon of filling in the center of each square.
  19. 19. Fold the dough over the filling to form a triangle.
  20. 20. Press the edges of the triangle firmly.
  21. 21. Wrap the two bottom corners around your index finger.
  22. 22. Press the corners together firmly.
  23. 23. Fold the dough tips inward.
  24. 24. Let the tortellini dry slightly on a floured surface.
  25. 25. Repeat the shaping process for all tortellini.
  26. 26. Cook or process the tortellini as desired.
