🍰 Homemade Tortellini with Meat Filling

Ingredients
- 200 g flour
- 100 g semolina
- 3 eggs
- 2 tbsp olive oil
- salt
- 1 onion
- 1 clove of garlic
- 2 tbsp olive oil
- 1 egg
- 350 g minced meat (mixed)
- salt
- pepper (from the mill)
- flour (for working)
Instructions
- 1. Mound the flour and semolina on your work surface.
- 2. Make a well in the center.
- 3. Crack the eggs into the well.
- 4. Add the olive oil and a pinch of salt.
- 5. Knead everything by hand into a smooth dough.
- 6. Keep kneading until the dough is elastic and no longer sticks.
- 7. Add a little more flour or water if needed.
- 8. Wrap the dough in cling film.
- 9. Let the dough rest in the fridge for 30 minutes.
- 10. Peel the onion and garlic.
- 11. Finely dice the onion and garlic.
- 12. Sauté the vegetables in hot oil until translucent.
- 13. Add the sautéed vegetables and the egg to the minced meat.
- 14. Season the filling with salt and pepper.
- 15. Divide the dough into smaller portions.
- 16. Roll out the dough thinly.
- 17. Cut the dough into squares of approx. 6x6 cm.
- 18. Place a teaspoon of filling in the center of each square.
- 19. Fold the dough over the filling to form a triangle.
- 20. Press the edges of the triangle firmly.
- 21. Wrap the two bottom corners around your index finger.
- 22. Press the corners together firmly.
- 23. Fold the dough tips inward.
- 24. Let the tortellini dry slightly on a floured surface.
- 25. Repeat the shaping process for all tortellini.
- 26. Cook or process the tortellini as desired.
