🍰 Homemade Tortellini with Cream Cheese Filling

Ingredients
- 170 g spelt flour (Type 630)
- 100 g spelt wholemeal flour
- 0.5 tsp salt
- 3 eggs
- 2 tbsp olive oil
- 1 handful mixed herbs (e.g. basil, parsley, chives)
- 1 lemon
- 250 g cream cheese
- pepper
Instructions
- 1. Place 150 grams of Type 630 spelt flour and 100 grams of whole grain spelt flour with a pinch of salt on your work surface.
- 2. Make a well in the center of the flour mixture.
- 3. Add 2 eggs and 2 tablespoons of olive oil into the well.
- 4. Knead everything with your hands until you have a smooth dough.
- 5. Shape the dough into a ball.
- 6. Place the dough ball into a bowl.
- 7. Cover the bowl with a plate.
- 8. Let the dough rest in the refrigerator for 30 minutes.
- 9. Wash the herbs and shake them dry.
- 10. Finely chop the herbs.
- 11. Separate an egg and set the egg white aside.
- 12. Mix the egg yolk with the chopped herbs and the cream cheese.
- 13. Rinse a lemon with hot water and dry it thoroughly.
- 14. Grate the zest from half of the lemon.
- 15. Cut the lemon in half.
- 16. Squeeze out 1 teaspoon of lemon juice.
- 17. Stir the lemon zest and juice into the cream cheese filling.
- 18. Season the filling with salt and pepper to taste.
- 19. Dust your work surface with the remaining spelt flour.
- 20. Take the dough out of the refrigerator.
- 21. Roll out the dough on the floured surface with a rolling pin as thinly as possible.
- 22. Cut out circles with a diameter of 8 centimeters from the dough.
- 23. Place 1 teaspoon of cream cheese filling in the center of each circle.
- 24. Brush the edges of the dough circles with the reserved egg white.
- 25. Fold the edges to form half-moons.
- 26. Press the edge firmly to seal it.
- 27. Fold the edge up on one side.
- 28. Shape the tortellini into a round form.
- 29. Gather the tips together.
- 30. Place the tips over each other around your finger.
- 31. Press the tips firmly together.
- 32. Process the remaining dough into tortellini in the same way.
- 33. Bring water to a boil in a large pot.
- 34. Salt the boiling water generously.
- 35. Add the tortellini to the boiling water.
- 36. Cook the tortellini for 3 minutes over high heat.
- 37. Remove the tortellini from the water as soon as they float to the surface.
- 38. Lift the cooked tortellini out of the pot with a slotted spoon.
- 39. Let the tortellini drain in a sieve.
