  1. 1. Place 150 grams of Type 630 spelt flour and 100 grams of whole grain spelt flour with a pinch of salt on your work surface.
  2. 2. Make a well in the center of the flour mixture.
  3. 3. Add 2 eggs and 2 tablespoons of olive oil into the well.
  4. 4. Knead everything with your hands until you have a smooth dough.
  5. 5. Shape the dough into a ball.
  6. 6. Place the dough ball into a bowl.
  7. 7. Cover the bowl with a plate.
  8. 8. Let the dough rest in the refrigerator for 30 minutes.
  9. 9. Wash the herbs and shake them dry.
  10. 10. Finely chop the herbs.
  11. 11. Separate an egg and set the egg white aside.
  12. 12. Mix the egg yolk with the chopped herbs and the cream cheese.
  13. 13. Rinse a lemon with hot water and dry it thoroughly.
  14. 14. Grate the zest from half of the lemon.
  15. 15. Cut the lemon in half.
  16. 16. Squeeze out 1 teaspoon of lemon juice.
  17. 17. Stir the lemon zest and juice into the cream cheese filling.
  18. 18. Season the filling with salt and pepper to taste.
  19. 19. Dust your work surface with the remaining spelt flour.
  20. 20. Take the dough out of the refrigerator.
  21. 21. Roll out the dough on the floured surface with a rolling pin as thinly as possible.
  22. 22. Cut out circles with a diameter of 8 centimeters from the dough.
  23. 23. Place 1 teaspoon of cream cheese filling in the center of each circle.
  24. 24. Brush the edges of the dough circles with the reserved egg white.
  25. 25. Fold the edges to form half-moons.

  28. 28. Shape the tortellini into a round form.

  33. 33. Bring water to a boil in a large pot.
  34. 34. Salt the boiling water generously.
  35. 35. Add the tortellini to the boiling water.
  36. 36. Cook the tortellini for 3 minutes over high heat.
  37. 37. Remove the tortellini from the water as soon as they float to the surface.
  38. 38. Lift the cooked tortellini out of the pot with a slotted spoon.
