🍰 Homemade Tortellini in Creamy Sauce

Ingredients
- 300 g flour
- 4 eggs
- water (if needed)
- salt
- 50 g raw ham
- 2 tbsp butter
- 1 onion
- 250 g minced meat
- 1 tbsp breadcrumbs
- 2 tbsp grated Parmesan
- 1 egg yolk
- 200 g peas (frozen)
- 150 g ham

- 1 tbsp cornstarch
- 200 ml heavy cream
- 50 ml vegetable broth
- grated Parmesan (for sprinkling)
- parsley (for garnish)
Instructions
- 1. Quickly knead the dough ingredients into a smooth pasta dough.
- 2. Shape the dough into a ball.
- 3. Wrap the dough ball in cling film.
- 4. Let the dough rest for 30 minutes.
- 5. Peel the onion for the filling.
- 6. Finely chop the onion.
- 7. Sauté the onion in the butter.
- 8. Add the diced ham.
- 9. Fry the ham briefly.
- 10. Mix the mixture in a bowl with minced meat.
- 11. Add breadcrumbs.
- 12. Add grated Parmesan.
- 13. Add the egg yolk.
- 14. Season the filling with salt and pepper.
- 15. Roll out the pasta dough thinly on a floured surface.
- 16. Cut the dough into squares of approx. 5 to 6 cm.
- 17. Place 1 teaspoon of filling in the center of each square.
- 18. Fold the squares into triangles.
- 19. Press the edges firmly together.
- 20. Wrap the triangles around your index finger with the point facing down.
- 21. Press the ends firmly together.
- 22. Fold the dough tip over with the other hand.
- 23. Pull the tortellini off the finger.
- 24. Place the tortellini on a floured kitchen towel.
- 25. Let the peas thaw.
- 26. Cut the ham into small cubes.
- 27. Peel the onion for the sauce.
- 28. Cut the onion into small cubes.
- 29. Heat the butter in a pan.
- 30. Sauté the onion in the hot butter.
- 31. Add the peas.
- 32. Sauté the peas briefly.
- 33. Dust the pan with cornstarch.
- 34. Deglaze with cream.
- 35. Deglaze with vegetable broth.
- 36. Let the sauce simmer gently for approx. 3 minutes.
- 37. Cook the tortellini in simmering water for 5 minutes.
- 38. Drain the tortellini.
- 39. Drain the tortellini well.
- 40. Mix the tortellini with the sauce.
- 41. Sprinkle the tortellini with Parmesan.
- 42. Plate the tortellini.
- 43. Garnish the dishes with parsley.
