🍰 Herb Tartlets

Ingredients
- 200 g flour
- 100 g cold butter
- 1 pinch salt
- 1 egg
- 150 g mixed herbs (purslane, watercress, parsley, chives)
- 1 shallot
- 1 tbsp butter
- 150 g crème fraîche
- salt
- pepper (from the mill)
- nutmeg
- 2 tsp lemon juice
- chive stems
- 1 small tomato (sliced)
Instructions
- 1. Mound the flour on a clean work surface.
- 2. Mix the flour with a pinch of salt.
- 3. Make a well in the center of the flour mixture.
- 4. Cut the cold butter into small cubes.
- 5. Distribute the butter cubes around the well.
- 6. Place the egg in the center of the well.
- 7. Chop all ingredients roughly with a knife until small crumbs form.
- 8. Knead the crumbs quickly with your hands into a smooth dough.
- 9. Shape the dough into a ball.
- 10. Wrap the dough ball in cling film.
- 11. Let the dough rest in the refrigerator for 30 minutes.
- 12. Clean the herbs and remove woody stems.
- 13. Bring salted water to a boil.
- 14. Blanch the herbs briefly in the boiling water (cook briefly in boiling water).
- 15. Drain the herbs.
- 16. Shock the herbs with cold water to preserve the color.
- 17. Squeeze the herbs well to remove excess water.
- 18. Chop the herbs finely.
- 19. Peel the shallot.
- 20. Dice the shallot finely.
- 21. Sauté the shallot cubes in hot butter until translucent.
- 22. Add the chopped herbs to the shallots.
- 23. Fry the herbs briefly.
- 24. Stir in the crème fraîche.
- 25. Season the mixture with grated nutmeg.
- 26. Add lemon juice.
- 27. Season to taste with salt and pepper.
- 28. Dust a work surface with flour.
- 29. Roll out the dough thinly.
- 30. Grease the small tartlet molds.
- 31. Line the molds with the dough.
- 32. Fill the molds with the herb mixture.
- 33. Preheat the oven to 220°C.
- 34. Bake the tartlets in the preheated oven.
- 35. Bake them for about 30 minutes until golden brown.
- 36. Slice the tomatoes.
- 37. Chop chives finely.
- 38. Garnish the finished tartlets with tomato slices and chives.
- 39. Serve the tartlets immediately.
