  1. 1. Mound the flour on a clean work surface.
  2. 2. Mix the flour with a pinch of salt.
  3. 3. Make a well in the center of the flour mixture.
  4. 4. Cut the cold butter into small cubes.
  5. 5. Distribute the butter cubes around the well.
  6. 6. Place the egg in the center of the well.
  7. 7. Chop all ingredients roughly with a knife until small crumbs form.
  8. 8. Knead the crumbs quickly with your hands into a smooth dough.
  9. 9. Shape the dough into a ball.
  10. 10. Wrap the dough ball in cling film.
  11. 11. Let the dough rest in the refrigerator for 30 minutes.
  12. 12. Clean the herbs and remove woody stems.
  13. 13. Bring salted water to a boil.
  14. 14. Blanch the herbs briefly in the boiling water (cook briefly in boiling water).
  15. 15. Drain the herbs.
  16. 16. Shock the herbs with cold water to preserve the color.
  17. 17. Squeeze the herbs well to remove excess water.
  18. 18. Chop the herbs finely.
  19. 19. Peel the shallot.
  20. 20. Dice the shallot finely.
  21. 21. Sauté the shallot cubes in hot butter until translucent.
  22. 22. Add the chopped herbs to the shallots.
  23. 23. Fry the herbs briefly.
  24. 24. Stir in the crème fraîche.
  25. 25. Season the mixture with grated nutmeg.

  32. 32. Fill the molds with the herb mixture.
  33. 33. Preheat the oven to 220°C.
  34. 34. Bake the tartlets in the preheated oven.
  35. 35. Bake them for about 30 minutes until golden brown.
  36. 36. Slice the tomatoes.
  37. 37. Chop chives finely.
  38. 38. Garnish the finished tartlets with tomato slices and chives.
  39. 39. Serve the tartlets immediately.
