🍽️ Topinambur Fritters with Smoked Salmon

Ingredients
- 1 kg Jerusalem artichoke
- 2 eggs
- 1 tbsp flour
- salt
- pepper (from the mill)
- oil (for frying)
- 400 g smoked salmon (in slices)
Instructions
- 1. Peel the topinambur, wash it thoroughly, and coarsely grate it, then mix with the eggs and flour. Season with salt and pepper.
- 2. Heat oil in a large pan and add 1 tablespoon of the mixture per fritter, flattening it out, and fry until golden brown on both sides.
- 3. Serve the fritters with smoked salmon.
