  1. 1. Pour boiling water over the tomatoes.
  2. 2. Immediately shock the tomatoes with cold water.
  3. 3. Remove the skin from the tomatoes.
  4. 4. Halve the tomatoes.
  5. 5. Cut the flesh into small cubes.
  6. 6. Peel the onion and the garlic.
  7. 7. Finely chop the onion and the garlic.
  8. 8. Heat one tablespoon of oil in a pot.
  9. 9. Sauté the onions and garlic until translucent.
  10. 10. Add oregano.
  11. 11. Stir in the tomato cubes and tomato paste.
  12. 12. Pour in the vegetable broth.
  13. 13. Add a bay leaf, salt, and pepper.
  14. 14. Bring the soup to a boil.
  15. 15. Simmer the soup covered for about five minutes.
  16. 16. Wash the basil.
  17. 17. Shake the basil dry.
  18. 18. Cut the basil leaves into fine strips.
  19. 19. Remove the bay leaf from the soup.
  20. 20. Puree the soup with a hand blender.
  21. 21. Season the soup with balsamic vinegar.
  22. 22. Sprinkle half of the chopped basil over the soup.
  23. 23. Stir in the remaining half of the basil.
  24. 24. Drizzle the remaining olive oil over the soup.
  25. 25. Serve the soup immediately.
