🍽️ Italian-style Tomato Soup

Ingredients
- 400 g tomatoes (5 tomatoes)
- 0.5 onion
- 1 clove of garlic
- 2 tbsp olive oil
- 1 tsp oregano
- 100 ml vegetable broth
- 1 tsp tomato paste
- 1 bay leaf
- salt
- pepper
- 2 Stiele basil
- 0.5 tsp balsamic vinegar
Instructions
- 1. Pour boiling water over the tomatoes.
- 2. Immediately shock the tomatoes with cold water.
- 3. Remove the skin from the tomatoes.
- 4. Halve the tomatoes.
- 5. Cut the flesh into small cubes.
- 6. Peel the onion and the garlic.
- 7. Finely chop the onion and the garlic.
- 8. Heat one tablespoon of oil in a pot.
- 9. Sauté the onions and garlic until translucent.
- 10. Add oregano.
- 11. Stir in the tomato cubes and tomato paste.
- 12. Pour in the vegetable broth.
- 13. Add a bay leaf, salt, and pepper.
- 14. Bring the soup to a boil.
- 15. Simmer the soup covered for about five minutes.
- 16. Wash the basil.
- 17. Shake the basil dry.
- 18. Cut the basil leaves into fine strips.
- 19. Remove the bay leaf from the soup.
- 20. Puree the soup with a hand blender.
- 21. Season the soup with balsamic vinegar.
- 22. Sprinkle half of the chopped basil over the soup.
- 23. Stir in the remaining half of the basil.
- 24. Drizzle the remaining olive oil over the soup.
- 25. Serve the soup immediately.
