🍽️ Creamy Tomato Soup

Ingredients
- 1 onion
- 2 garlic cloves
- 4 tbsp olive oil
- 650 g ripe tomatoes
- 2 tbsp tomato paste
- 600 ml vegetable broth
- salt
- pepper (from the mill)
- 1 tsp honey
- 1 tsp dried oregano
- 60 ml whipping cream (30% fat)
- 2 tbsp crème fraîche (30% fat)
- basil
Instructions
- 1. Peel the onion and the garlic.
- 2. Cut the onion and the garlic into small pieces.
- 3. Heat two tablespoons of olive oil in a pot.
- 4. Add the onion and the garlic to the hot oil.
- 5. Sauté the vegetables for two to three minutes over medium heat.
- 6. Wash the tomatoes thoroughly.
- 7. Break the tomatoes into rough pieces.
- 8. Add the tomato pieces to the onion and garlic in the pot.
- 9. Simmer the tomatoes for ten minutes.
- 10. Stir the tomato paste into the mixture.
- 11. Pour the broth into the pot.
- 12. Season the soup with salt.
- 13. Add pepper.
- 14. Add the honey to the soup.
- 15. Sprinkle oregano over it.
- 16. Let the soup simmer for twenty minutes over medium heat.
- 17. Blend the soup with a hand blender.
- 18. Pour the soup through a sieve to make it smooth.
- 19. Return the pureed soup to the pot.
- 20. Stir the cream into the soup.
- 21. Bring the soup back to a boil.
- 22. Wash the basil.
- 23. Dry the basil.
- 24. Taste the soup and adjust the seasoning.
- 25. Fill the soup into deep plates.
- 26. Garnish the soup with fresh basil.
- 27. Add a dollop of crème fraîche on top.
- 28. Drizzle some olive oil over the soup.
- 29. Serve the soup immediately.
