🍽️ Tomato Cream Soup for Lovers

Ingredients
- 600 g ripe tomatoes (e.g. cherry tomatoes)
- 1 shallot
- 1 clove of garlic
- 2 tbsp olive oil
- 2 tbsp tomato paste
- 1 tsp sugar
- 800 ml broth (as desired meat, poultry or vegetable broth)
- salt
- pepper (from the mill)
- 4 tbsp crème fraîche
- basil (for garnishing)
Instructions
- 1. Wash the tomatoes and cut them into quarters.
- 2. Peel the shallot and the garlic.
- 3. Finely chop the shallot and garlic.
- 4. Heat oil in a pot.
- 5. Add the chopped shallot and garlic to the hot oil.
- 6. Sauté the vegetables until translucent.
- 7. Sprinkle sugar over the mixture.
- 8. Let the sugar caramelize slightly.
- 9. Add the tomato paste and sauté it briefly.
- 10. Add the quartered tomatoes to the pot.
- 11. Pour in the broth.
- 12. Bring the soup to a boil.
- 13. Reduce the heat and cover the pot.
- 14. Simmer the soup on low heat for about 15 minutes.
- 15. Roughly puree the soup with a hand blender.
- 16. Season the soup with salt and pepper.
- 17. Divide the soup among small plates or bowls.
- 18. Drop crème fraîche onto the soup.
- 19. Draw a heart shape in the soup with the crème fraîche.
- 20. Garnish the soup with fresh basil.
- 21. Serve the soup immediately.
