🍽️ Creamy Tomato Soup

Ingredients
- 1 onion
- 2 garlic cloves
- 4 tbsp olive oil
- 650 g ripe tomatoes
- 2 tbsp tomato paste
- 600 ml vegetable broth
- salt
- pepper (from the mill)
- 1 tsp honey
- 1 tsp dried oregano
- 60 ml whipping cream (30% fat)
- 2 tbsp crème fraîche (30% fat)

Instructions
- 1. Peel the onion and the garlic.
- 2. Finely chop the onion and the garlic.
- 3. Heat 2 tablespoons of olive oil in a pot.
- 4. Add the onion and the garlic to the hot oil.
- 5. Sauté the vegetables for 2 to 3 minutes over medium heat.
- 6. Wash the tomatoes.
- 7. Roughly chop the tomatoes.
- 8. Add the tomatoes to the onions and garlic.
- 9. Simmer the mixture for 10 minutes.
- 10. Stir in the tomato paste.
- 11. Pour in the broth.
- 12. Season the soup with salt, pepper, honey, and oregano.
- 13. Let the soup simmer for 20 minutes over medium heat.
- 14. Purée the soup until smooth.
- 15. Strain the soup through a sieve.
- 16. Return the puréed soup to the pot.
- 17. Stir in the cream.
- 18. Bring the soup back to a boil.
- 19. Wash the basil.
- 20. Shake the basil dry.
- 21. Taste the soup and adjust the seasoning.
- 22. Serve the soup in deep plates.
- 23. Garnish the soup with fresh basil.
- 24. Add a dollop of crème fraîche on top.
- 25. Drizzle a little olive oil over it.
- 26. Serve the soup immediately.
