  1. 1. Peel the onion and the garlic.
  2. 2. Finely chop the onion and the garlic.
  3. 3. Heat 2 tablespoons of olive oil in a pot.
  4. 4. Add the onion and the garlic to the hot oil.
  5. 5. Sauté the vegetables for 2 to 3 minutes over medium heat.
  6. 6. Wash the tomatoes.
  7. 7. Roughly chop the tomatoes.
  8. 8. Add the tomatoes to the onions and garlic.
  9. 9. Simmer the mixture for 10 minutes.
  10. 10. Stir in the tomato paste.
  11. 11. Pour in the broth.
  12. 12. Season the soup with salt, pepper, honey, and oregano.
  13. 13. Let the soup simmer for 20 minutes over medium heat.
  14. 14. Purée the soup until smooth.
  15. 15. Strain the soup through a sieve.
  16. 16. Return the puréed soup to the pot.
  17. 17. Stir in the cream.
  18. 18. Bring the soup back to a boil.
  19. 19. Wash the basil.
  20. 20. Shake the basil dry.
  21. 21. Taste the soup and adjust the seasoning.
  22. 22. Serve the soup in deep plates.
  23. 23. Garnish the soup with fresh basil.
  24. 24. Add a dollop of crème fraîche on top.
  25. 25. Drizzle a little olive oil over it.
  26. 26. Serve the soup immediately.
