🍽️ Creamy Tomato and Onion Soup

Ingredients
- 1 kg ripe tomatoes
- 1 tbsp tomato paste
- 1 onion
- 2 tbsp olive oil
- 500 ml vegetable stock
- 150 g whipping cream
- salt
- pepper (from the mill)
- basil (for garnishing)
Instructions
- 1. Peel the onion and cut it into small cubes.
- 2. Wash the tomatoes, remove the tough stems, and chop them into small pieces.
- 3. Heat some oil in a pot.
- 4. Sauté the onion cubes until they are soft and translucent.
- 5. Stir in the tomato paste and mix it well with the onion.
- 6. Add the chopped tomatoes and let them cook briefly.
- 7. Pour the vegetable broth into the pot.
- 8. Season the soup with salt and pepper to your liking.
- 9. Let the soup simmer on low heat for about 20 minutes.
- 10. Then puree the soup through a fine sieve into a clean pot.
- 11. Heat the smooth soup again briefly.
- 12. Taste the soup again and adjust the seasoning if necessary.
- 13. Whip the cream in a separate bowl until stiff.
- 14. Ladle the hot soup onto the plates.
- 15. Place a dollop of the whipped cream on each portion.
- 16. Drag a toothpick or spoon through the cream to create patterns.
- 17. Garnish the finished soup with fresh basil leaves.
