🍽️ Fresh Tomato Sauce with Pine Nuts

Ingredients
- 500 g tomatoes
- 2 garlic cloves
- 2 shallots
- 1 red chili pepper
- 2 tbsp olive oil
- 70 g pine nuts
- 500 ml vegetable broth
- salt
- pepper (from the mill)
- 1 tbsp chopped rosemary
- 3 tbsp capers
Instructions
- 1. Wash the tomatoes thoroughly.
- 2. Remove the hard stem area at the top.
- 3. Cut a small cross into the bottom of the tomatoes.
- 4. Place the tomatoes in boiling water for about 2 minutes.
- 5. Remove the tomatoes immediately and rinse them with cold water.
- 6. Peel the skin off the tomatoes.
- 7. Cut the peeled tomatoes into small cubes.
- 8. Peel the garlic and the shallots.
- 9. Cut the garlic and shallots into very fine cubes.
- 10. Wash the chili pepper.
- 11. Cut the chili pepper in half lengthwise.
- 12. Remove the seeds from the chili pepper.
- 13. Finely chop the chili pepper.
- 14. Heat the oil in a pot.
- 15. Add the cubes of shallots, garlic, and chili to the pot.
- 16. Add the pine nuts.
- 17. Sauté the mixture for 2 to 3 minutes.
- 18. Add the tomato cubes to the pot.
- 19. Pour in the vegetable broth.
- 20. Season the sauce with salt, pepper, sugar, and rosemary.
- 21. Let the sauce simmer for about 1 hour over medium heat.
- 22. Taste the sauce again and adjust seasoning if needed.
- 23. Stir the capers into the finished sauce.
- 24. Serve the sauce warm.
