Ingredients
- 4 spring onions
- 300 g ricotta
- 3 tbsp olive oil
- salt
- pepper (freshly ground)
- 2 tbsp lemon juice
- 5 tomatoes
Instructions
- 1. Wash the spring onions thoroughly.
- 2. Slice the spring onions diagonally into thin rings.
- 3. Stir the ricotta vigorously with the oil in a bowl.
- 4. Season the ricotta mixture with salt, pepper, and lemon juice.
- 5. Fold the spring onion rings into the ricotta cream, but keep two tablespoons aside for later.
- 6. Wash the tomatoes and slice them crosswise into thick slices.
- 7. Place the tomato slices on small plates.
- 8. Season the tomato slices with salt and pepper to taste.
- 9. Distribute the ricotta filling evenly over the tomato slices.
- 10. Sprinkle the plates with the reserved spring onion rings.
- 11. Serve the dish immediately.
