🍽️ Smooth Tomato Vegetable Sauce for Babies

Ingredients
- 0.25 red bell pepper
- 30 g carrots
- 2 garlic cloves
- 1 tsp olive oil
- 0.25 tsp dried Italian herbs
- 0.25 tsp salt
- 5 basil leaves
- 60 g cannellini beans (drained weight; can)
- 400 g diced tomatoes (can)
- 1 tbsp nutritional yeast flakes
Instructions
- 1. Wash the bell pepper thoroughly and remove the inside. Cut the vegetable into very small cubes.
- 2. Peel the carrot and chop it finely as well.
- 3. Peel the garlic clove and crush it very finely or press it.
- 4. Heat the olive oil in a small pot.
- 5. Add the carrots and the bell pepper to the pot.
- 6. Sauté the vegetables over medium heat for about 3 to 4 minutes until they are soft.
- 7. Add the garlic, Italian herbs, and salt.
- 8. Let the mixture simmer over low heat for another 1 to 2 minutes.
- 9. Wash the basil leaves and shake them dry.
- 10. Drain the beans in a sieve.
- 11. Add the drained beans and the chunky tomatoes to the vegetable mixture in the pot.
- 12. Bring the sauce to a gentle simmer over medium heat.
- 13. Remove the pot from the heat.
- 14. Stir in the basil leaves and the nutritional yeast flakes.
- 15. Let the sauce cool down for about 5 minutes.
- 16. Puree the sauce until smooth using a blender or food processor.
- 17. Serve the tomato sauce on its own or mix it with cooked pasta.
