🍽️ Fresh Tomato Sauce

Ingredients
- 1 kg tomatoes
- 2 garlic cloves
- salt
- pepper (from the mill)
- 1 tsp sugar
- 2 tbsp tomato paste
- 1 sprig basil
- 1 sprig thyme
- 2 tbsp olive oil
Instructions
- 1. Wash the tomatoes thoroughly.
- 2. Cut the tomatoes into small pieces.
- 3. Peel the garlic cloves.
- 4. Mince the garlic very finely.
- 5. Heat the olive oil in a pot.
- 6. Add the minced garlic to the hot oil.
- 7. Sauté the garlic briefly until fragrant.
- 8. Stir in the tomato paste.
- 9. Add the cut tomatoes.
- 10. Bring the mixture to a boil.
- 11. Season with a pinch of sugar.
- 12. Salt the sauce to taste.
- 13. Pepper the sauce to taste.
- 14. Add the thyme sprig to the pot.
- 15. Fold in the chopped basil.
- 16. Let the sauce simmer uncovered for about 30 minutes.
- 17. Pour the finished sauce through a fine sieve.
- 18. Taste the strained sauce one more time.
