  1. 1. Score the bottom of the tomatoes with a cross-shaped cut.
  2. 2. Pour boiling water over the tomatoes.
  3. 3. Immediately shock the tomatoes in cold water.
  4. 4. Peel the skin off the tomatoes.
  5. 5. Remove the seeds and the green core area.
  6. 6. Dice the tomato flesh into small cubes.
  7. 7. Wash the carrot and celery thoroughly.
  8. 8. Cut the carrot and celery into small pieces.
  9. 9. Finely chop the garlic clove.
  10. 10. Heat the oil in a pot.
  11. 11. Sauté the garlic and chopped vegetables until translucent.
  12. 12. Stir the diced tomatoes into the vegetables.
  13. 13. Add the finely chopped rosemary needles.
  14. 14. Season the sauce with salt, pepper, and sugar.
  15. 15. Simmer the sauce covered on medium heat for about 1 hour.
  16. 16. Stir the sauce occasionally while cooking.
  17. 17. Strain the finished sauce through a fine sieve.
  18. 18. Fold the finely chopped basil into the sauce.
