🍽️ Fresh Tomato Salsa

Ingredients
- 1 kg ripe tomatoes
- 1 carrot
- 2 stalks celery
- 2 garlic cloves
- 2 tbsp olive oil
- 1 sprig fresh rosemary
- 1 bunch basil
- 1 pinch sugar
- salt
- freshly ground pepper
Instructions
- 1. Score the bottom of the tomatoes with a cross-shaped cut.
- 2. Pour boiling water over the tomatoes.
- 3. Immediately shock the tomatoes in cold water.
- 4. Peel the skin off the tomatoes.
- 5. Remove the seeds and the green core area.
- 6. Dice the tomato flesh into small cubes.
- 7. Wash the carrot and celery thoroughly.
- 8. Cut the carrot and celery into small pieces.
- 9. Finely chop the garlic clove.
- 10. Heat the oil in a pot.
- 11. Sauté the garlic and chopped vegetables until translucent.
- 12. Stir the diced tomatoes into the vegetables.
- 13. Add the finely chopped rosemary needles.
- 14. Season the sauce with salt, pepper, and sugar.
- 15. Simmer the sauce covered on medium heat for about 1 hour.
- 16. Stir the sauce occasionally while cooking.
- 17. Strain the finished sauce through a fine sieve.
- 18. Fold the finely chopped basil into the sauce.
