  1. 1. Cut off the tough stems from the arugula.
  2. 2. Wash the leafy greens thoroughly under running water.
  3. 3. Spin the arugula dry or gently pat it with a kitchen towel.
  4. 4. Also wash the cherry tomatoes thoroughly.
  5. 5. Dry the tomatoes with a cloth.
  6. 6. Cut each cherry tomato in half.
  7. 7. Put oil, balsamic vinegar, pepper, and salt into a small bowl.
  8. 8. Whisk the ingredients vigorously until a creamy vinaigrette (a sauce made of oil and vinegar) forms.
  9. 9. Put the arugula and the halved tomatoes into a large salad bowl.
  10. 10. Pour the vinaigrette over the vegetables.
  11. 11. Toss the salad gently to ensure everything is evenly coated.
  12. 12. Divide the salad onto individual plates.
  13. 13. Grate fresh Parmesan cheese over the finished salads.
