🍽️ Fresh Tomato and Arugula Salad

Ingredients
- 200 g arugula
- 150 g cherry tomatoes
- 4 tbsp olive oil (à 40 ml)
- 2 tbsp balsamic vinegar
- salt
- pepper (from the mill)
- 100 g parmesan (in a block)
Instructions
- 1. Cut off the tough stems from the arugula.
- 2. Wash the leafy greens thoroughly under running water.
- 3. Spin the arugula dry or gently pat it with a kitchen towel.
- 4. Also wash the cherry tomatoes thoroughly.
- 5. Dry the tomatoes with a cloth.
- 6. Cut each cherry tomato in half.
- 7. Put oil, balsamic vinegar, pepper, and salt into a small bowl.
- 8. Whisk the ingredients vigorously until a creamy vinaigrette (a sauce made of oil and vinegar) forms.
- 9. Put the arugula and the halved tomatoes into a large salad bowl.
- 10. Pour the vinaigrette over the vegetables.
- 11. Toss the salad gently to ensure everything is evenly coated.
- 12. Divide the salad onto individual plates.
- 13. Grate fresh Parmesan cheese over the finished salads.
