🍽️ Grilled Turkey Cubes on Fresh Tomato and Grapefruit Salad

Ingredients
- 600 g turkey breast fillet
- 3 sprigs thyme
- 1 handful basil
- 1 handful chives
- 1 tbsp olive oil
- 0.5 lemon (juice)
- salt
- pepper
- 1 red onion
- 150 g salad mix (e.g. frisée, sorrel, arugula)
- 4 tomatoes
- 1 grapefruit
- 1 tsp honey
- 1 tbsp olive oil
- salt

Instructions
- 1. Rinse the turkey breast under running water.
- 2. Pat the meat completely dry with kitchen paper.
- 3. Cut the turkey breast into equal-sized cubes.
- 4. Wash the thyme and basil sprigs under cold water.
- 5. Shake the herbs vigorously to remove excess water.
- 6. Carefully pluck the leaves off the woody stems.
- 7. Wash the chives and dry them.
- 8. Cut the chives into fine rings.
- 9. Cut the larger basil leaves into fine strips.
- 10. Place the turkey cubes in a bowl.
- 11. Add the olive oil and lemon juice.
- 12. Mix everything well with the prepared herbs.
- 13. Season the mixture with salt and black pepper.
- 14. Heat a non-stick pan over medium heat.
- 15. Fry the turkey cubes for about 5 minutes.
- 16. Cook them until golden brown and done.
- 17. Peel the onion and remove the outer layers.
- 18. Dice the onion very finely.
- 19. Wash the salad mix under running water.
- 20. Spin the vegetables dry in a salad spinner.
- 21. Wash the tomatoes thoroughly.
- 22. Cut the tomatoes into quarters.
- 23. Remove the hard seeds from the tomato quarters.
- 24. Cut the tomato flesh into thin strips.
- 25. Peel the grapefruit completely to remove all skin remnants.
- 26. Carefully cut the fillets out of the membranes.
- 27. Squeeze the remaining fruit pulp to extract the juice.
- 28. Whisk the juice with the honey and the oil.
- 29. Season the dressing mixture with salt and pepper.
- 30. Place the onions, salad, tomatoes, and grapefruit fillets in a large bowl.
- 31. Pour the dressing over the salad ingredients.
- 32. Toss everything gently until evenly coated.
- 33. Serve the salad with the warm turkey cubes.
- 34. Thread the turkey cubes onto wooden skewers if desired.
