🍽️ Shaken Tomato and Zucchini Salad with Crispy Toast

Ingredients
- 2 Zucchini
- 450 g Cherry tomatoes
- 3 Red onions
- 80 g Black olives
- 4 sprigs Thyme
- 1 handful Basil
- 150 Feta
- Salt
- Pepper (from the mill)
- 4 tbsp White balsamic vinegar
- 120 ml Olive oil
- 6 slices Rustic bread
- 100 g Arugula
Instructions
- 1. Rinse the zucchini under running water and pat it dry with a kitchen towel.
- 2. Trim the hard ends off the zucchini and slice the vegetable thinly.
- 3. Wash the tomatoes and halve the larger cherry tomatoes.
- 4. Peel the onions and cut them into large wedges or chunks.
- 5. Drain the olives in a sieve.
- 6. Rinse the fresh herbs and dry them thoroughly.
- 7. Crumble the feta cheese into coarse pieces using your fingers.
- 8. Place the zucchini, tomatoes, onions, olives, herbs, and feta cheese into a large jar.
- 9. Season the mixture generously with salt and black pepper.
- 10. Add the vinegar and olive oil to the jar.
- 11. Close the jar tightly with the lid.
- 12. Shake the jar vigorously until all ingredients and the marinade are well mixed.
- 13. Let the salad sit for at least 30 minutes to allow the flavors to meld.
- 14. Toast the bread slices on a hot grill briefly until they are crispy.
- 15. Taste the salad again after waiting and adjust the seasoning if necessary.
- 16. Distribute the salad onto the toasted bread slices.
- 17. Wash the arugula and basil and dry them.
- 18. Garnish the finished toasts with the fresh arugula and basil.
