🍽️ Fresh Tomato and Avocado Salad

Ingredients
- 4 large tomatoes
- 3 avocados
- 2 tbsp lemon juice
- 200 g radishes
- 1 spring onion
- 1 tbsp sunflower oil
- 2 tbsp apple cider vinegar
- salt
- white pepper
- basil (for garnishing)
- 60 g pine nuts
Instructions
- 1. Wash the tomatoes thoroughly.
- 2. Cut the tomatoes in half.
- 3. Remove the hard stem area from the tomato halves.
- 4. Cut each tomato into six equal wedges.
- 5. Carefully cut the avocados in half.
- 6. Remove the pits from the avocado halves.
- 7. Peel the avocados and remove the dark skin.
- 8. Cut the avocado flesh into thin wedges.
- 9. Drizzle one to two tablespoons of lemon juice over the avocado pieces.
- 10. Wash the radishes under running water.
- 11. Remove the green stems and roots of the radishes.
- 12. Slice the radishes into very thin slices.
- 13. Cut the spring onion into thin rings.
- 14. Whisk the oil, vinegar, and remaining lemon juice together in a small bowl.
- 15. Add the radishes and spring onion rings to the dressing.
- 16. Season the dressing to taste with salt and pepper.
- 17. Wash the basil and pick off the leaves.
- 18. Arrange the tomato and avocado pieces in a star shape on the plates.
- 19. Scatter the basil over the salad.
- 20. Place the marinated radishes in the center of the plates.
- 21. Pour the dressing evenly over the entire salad.
- 22. Sprinkle the salad with pine nuts.
- 23. Serve the salad immediately.
