🍽️ Creamy Tomato and Carrot Soup with Gin Cream

Ingredients
- 700 g ripe tomatoes
- 250 g carrots
- 1 shallot
- 2 tbsp butter
- 1 bay leaf
- 400 ml vegetable broth
- 0.5 orange (juice and grated zest)
- 1 tsp honey
- salt
- pepper (from the mill)
- 2 crème fraîche
- 20 ml gin
Instructions
- 1. Pour boiling water over the tomatoes.
- 2. Peel the skin off the tomatoes.
- 3. Remove the seeds from the tomatoes.
- 4. Cut the tomato flesh into small cubes.
- 5. Peel the carrots.
- 6. Cut the carrots into small cubes as well.
- 7. Peel the shallot.
- 8. Finely chop the shallot.
- 9. Heat butter in a pot.
- 10. Sauté the shallot in the hot butter until translucent.
- 11. Add the carrots to the shallot.
- 12. Add the tomato cubes.
- 13. Add a bay leaf to the pot.
- 14. Let the vegetables sweat for a short time.
- 15. Pour vegetable broth into the pot.
- 16. Cover the pot.
- 17. Simmer the soup for about 30 minutes.
- 18. Remove the bay leaf from the soup.
- 19. Add orange juice to the soup.
- 20. Puree the soup until creamy.
- 21. Grate some orange zest over the soup.
- 22. Season the soup with honey.
- 23. Season the soup with salt.
- 24. Season the soup with pepper.
- 25. Serve the finished soup onto plates.
- 26. Mix crème fraîche with gin.
- 27. Add a spoonful of the gin cream to the soup.
