  6. 6. Place the tomato chunks into a cooking pot.
  7. 7. Let the tomatoes simmer for about 5 minutes.
  8. 8. Add the chopped shallots and garlic to the pot.
  9. 9. Cook the mixture for another 5 minutes.
  10. 10. Add a bay leaf to the pan.
  11. 11. Add the ginger.
  12. 12. Add allspice berries.
  13. 13. Add pepper.
  14. 14. Measure out 2 level tablespoons of salt.
  15. 15. Measure out 2 level tablespoons of sugar.
  16. 16. Add the salt and sugar to the pan.
  17. 17. Add the vinegar to the pan.
  18. 18. Let everything cook together for another 10 minutes.
  19. 19. Reduce the heat to a low setting.
  20. 20. Let the ketchup simmer uncovered.
  21. 21. Wait until the ketchup reaches a thick consistency.
  22. 22. Pour the ketchup through a fine sieve.
  23. 23. Return the strained ketchup to the pot.
  24. 24. Taste the ketchup again to adjust seasoning.
  25. 25. Fill the hot ketchup into bottles or jars.
  26. 26. Seal the bottles with cellophane or twist-off lids.
