🍽️ Homemade Tomato Ketchup

Ingredients
- 3 kg tomatoes
- 2 garlic cloves
- 2 shallots
- 3 bay leaves
- 1 tsp ginger powder
- 1 tsp allspice (ground)
- 1 tsp peppercorns
- 500 ml vinegar
- 2 tbsp sugar
- salt
- pepper
Instructions
- 1. Thoroughly wash the tomatoes under running water.
- 2. Remove the green stems from the tomatoes.
- 3. Cut the tomatoes into rough chunks.
- 4. Peel the shallots and the garlic.
- 5. Finely chop the shallots and the garlic.
- 6. Place the tomato chunks into a cooking pot.
- 7. Let the tomatoes simmer for about 5 minutes.
- 8. Add the chopped shallots and garlic to the pot.
- 9. Cook the mixture for another 5 minutes.
- 10. Add a bay leaf to the pan.
- 11. Add the ginger.
- 12. Add allspice berries.
- 13. Add pepper.
- 14. Measure out 2 level tablespoons of salt.
- 15. Measure out 2 level tablespoons of sugar.
- 16. Add the salt and sugar to the pan.
- 17. Add the vinegar to the pan.
- 18. Let everything cook together for another 10 minutes.
- 19. Reduce the heat to a low setting.
- 20. Let the ketchup simmer uncovered.
- 21. Wait until the ketchup reaches a thick consistency.
- 22. Pour the ketchup through a fine sieve.
- 23. Return the strained ketchup to the pot.
- 24. Taste the ketchup again to adjust seasoning.
- 25. Fill the hot ketchup into bottles or jars.
- 26. Seal the bottles with cellophane or twist-off lids.
