🍽️ Fresh cold tomato soup with crispy bread croutons

Ingredients
- 1 kg tomatoes
- 1 onion
- 3 garlic cloves
- 1 bunch parsley
- 1 bunch basil
- 2 sprigs thyme
- 1 sprig savory
- 2 tbsp olive oil
- salt
- pepper
- 2 slices rye bread
- 3 tbsp butter
Instructions
- 1. Wash the tomatoes thoroughly.
- 2. Cut the tomatoes into quarters.
- 3. Remove the seeds from the tomato pieces.
- 4. Peel the onion.
- 5. Peel the garlic clove.
- 6. Cut the onion into four parts.
- 7. Cut the garlic clove into four parts.
- 8. Finely chop the fresh herbs.
- 9. Place the tomato pieces, chopped herbs, onion pieces, and salt into the blender.
- 10. Blend the ingredients in the blender until smooth.
- 11. Optionally press the tomato mixture through a fine sieve to make it even smoother.
- 12. Season the soup to taste with salt.
- 13. Season the soup to taste with pepper.
- 14. Stir the olive oil into the finished soup.
- 15. Cut the bread into small cubes.
- 16. Fry the bread cubes in butter until golden brown.
- 17. Spread the crispy bread cubes over the cold tomato soup.
