🍽️ Tomato Dressing

Ingredients
- 4 tomatoes
- 1 tsp very finely chopped parsley (or cilantro)
- 2 garlic cloves
- 5 tbsp freshly squeezed orange juice
- 2 tbsp freshly squeezed lemon juice
- 1 small onion
- 4 tbsp olive oil
- 1 pinch sugar
- salt
- pepper (from the mill)
- chervil (for garnish)
Instructions
- 1. Blanch the tomatoes in boiling water, peel them, quarter, and remove the stems and seeds. Cut the flesh into small cubes and mix with the chopped parsley. Peel and press the garlic cloves and add them to the tomatoes.
- 2. Add the juice of the orange and lemon. Peel the onion, halve it, and cut into small cubes, then add it along with the oil. Season well with sugar, salt, and pepper, and let it sit for at least 15 minutes.
- 3. Serve the dressing in bowls, garnished with fresh herbs.
