🍽️ Creamy Tomato Sauce

Ingredients
- 1 bunch basil
- 1 onion
- 1 garlic clove
- 750 g tomatoes
- 2 tbsp olive oil
- 2 tbsp tomato paste
- 30 g flour
- 0.125 l vegetable broth
- salt
- pepper
- paprika powder (sweet)
- 75 g whipping cream
Instructions
- 1. Peel the onion and chop it very finely.
- 2. Peel the garlic clove and crush it.
- 3. Wash the tomatoes thoroughly.
- 4. Remove the hard stem ends from the tomatoes.
- 5. Cut the tomatoes into coarse cubes.
- 6. Wash the basil leaves.
- 7. Shake the basil dry.
- 8. Cut the basil into thin strips.
- 9. Heat the oil in a pan.
- 10. Sauté the onions and garlic in it until translucent.
- 11. Stir the tomato paste into the onions.
- 12. Fry the tomato paste briefly.
- 13. Add the tomato cubes to the pan.
- 14. Cover the pan with a lid.
- 15. Simmer the sauce for 10 minutes over low heat.
- 16. Sprinkle the flour over the simmering sauce.
- 17. Stir the flour in well.
- 18. Let the sauce cook for another 5 minutes while stirring.
- 19. Puree the sauce with a hand blender.
- 20. Strain the sauce through a fine sieve.
- 21. Thin the sauce with vegetable broth as needed.
- 22. Heat the sauce again.
- 23. Season the sauce with salt and pepper.
- 24. Whip the cream until semi-stiff.
- 25. Gently fold the whipped cream into the sauce.
- 26. Add the cut basil to the sauce.
- 27. Serve the sauce with meat, fish, or vegetables.
