  1. 1. Rinse the tomatoes thoroughly under running water.
  2. 2. Cut the tomatoes in half and remove the seeds.
  3. 3. Dice the flesh into small cubes.
  4. 4. Peel the onion and dice it finely.
  5. 5. Peel the ginger and chop it finely.
  6. 6. Add all prepared ingredients except the fennel to a large pot.
  7. 7. Heat the mixture while stirring constantly until it boils.
  8. 8. Simmer the chutney on low heat until it thickens.
  9. 9. Toast the fennel seeds briefly in a dry pan.
  10. 10. Grind the toasted fennel into a fine powder using a mortar.
  11. 11. Stir the fennel powder into the warm chutney.
  12. 12. Allow the chutney to cool down completely.
  13. 13. Taste the chutney and adjust the seasoning to your liking.
