🍽️ Fruity Tomato Chutney

Ingredients
- 600 g tomatoes
- 1 onion
- 20 g ginger
- 100 g raisins
- 150 ml white wine vinegar
- 0.25 tsp clove powder
- 0.5 tsp turmeric
- 2 tsp salt
- 100 g cane sugar
- 2 tsp fennel seeds
Instructions
- 1. Rinse the tomatoes thoroughly under running water.
- 2. Cut the tomatoes in half and remove the seeds.
- 3. Dice the flesh into small cubes.
- 4. Peel the onion and dice it finely.
- 5. Peel the ginger and chop it finely.
- 6. Add all prepared ingredients except the fennel to a large pot.
- 7. Heat the mixture while stirring constantly until it boils.
- 8. Simmer the chutney on low heat until it thickens.
- 9. Toast the fennel seeds briefly in a dry pan.
- 10. Grind the toasted fennel into a fine powder using a mortar.
- 11. Stir the fennel powder into the warm chutney.
- 12. Allow the chutney to cool down completely.
- 13. Taste the chutney and adjust the seasoning to your liking.
