🍽️ Homemade Tomato Chutney

Ingredients
- 700 g green tomatoes
- 1 onion
- 1 untreated lemon
- 1 green chili pepper
- 10 g ginger
- 1 tsp coriander seeds
- 1 tsp mustard seeds
- 2 fresh bay leaves
- 250 g jam sugar (2:1)
- 1 tsp salt
Instructions
- 1. Thoroughly wash the tomatoes under running water.
- 2. Cut the washed tomatoes into wedges.
- 3. Peel the onion and cut it in half.
- 4. Cut the onion halves into thin strips or grate them finely.
- 5. Rinse the lemon with hot water and dry it.
- 6. Finely grate the zest from half of the lemon.
- 7. Remove the ends of the lemon.
- 8. Slice the lemon into thin rounds.
- 9. Remove the seeds from the chili pepper if desired.
- 10. Cut the chili pepper into thin rings.
- 11. Peel the ginger.
- 12. Grate the ginger finely.
- 13. Place the tomatoes, onions, lemon slices, lemon zest, chili, and ginger into a large pot.
- 14. Coarsely crush the coriander seeds in a mortar.
- 15. Add the crushed coriander, mustard seeds, and bay leaves to the pot.
- 16. Stir the sugar and salt into the mixture.
- 17. Mix all ingredients thoroughly.
- 18. Let the chutney steep in the closed pot for about 4 hours.
- 19. Stir the chutney occasionally during the steeping time.
- 20. Bring the chutney to a boil without the lid.
- 21. Simmer the chutney vigorously for about 20 minutes.
- 22. Stir the chutney regularly while cooking.
- 23. Rinse the jars with hot water beforehand.
- 24. Fill the finished chutney to the brim into the hot jars.
- 25. Seal the jars.
- 26. Let the jars cool down.
