  1. 1. Thoroughly wash the tomatoes under running water.
  2. 2. Cut the washed tomatoes into wedges.
  3. 3. Peel the onion and cut it in half.
  4. 4. Cut the onion halves into thin strips or grate them finely.
  5. 5. Rinse the lemon with hot water and dry it.
  6. 6. Finely grate the zest from half of the lemon.
  7. 7. Remove the ends of the lemon.
  8. 8. Slice the lemon into thin rounds.
  9. 9. Remove the seeds from the chili pepper if desired.
  10. 10. Cut the chili pepper into thin rings.
  11. 11. Peel the ginger.
  12. 12. Grate the ginger finely.
  13. 13. Place the tomatoes, onions, lemon slices, lemon zest, chili, and ginger into a large pot.
  14. 14. Coarsely crush the coriander seeds in a mortar.
  15. 15. Add the crushed coriander, mustard seeds, and bay leaves to the pot.
  16. 16. Stir the sugar and salt into the mixture.
  17. 17. Mix all ingredients thoroughly.
  18. 18. Let the chutney steep in the closed pot for about 4 hours.
  19. 19. Stir the chutney occasionally during the steeping time.
  20. 20. Bring the chutney to a boil without the lid.
  21. 21. Simmer the chutney vigorously for about 20 minutes.
  22. 22. Stir the chutney regularly while cooking.
  23. 23. Rinse the jars with hot water beforehand.
  24. 24. Fill the finished chutney to the brim into the hot jars.
  25. 25. Seal the jars.
  26. 26. Let the jars cool down.
