🍽️ Creamy Tomato Soup with Ciabatta Cubes

Ingredients
- 1 kg tomatoes
- 4 shallots
- 2 garlic cloves
- 4 tbsp olive oil
- 1 l meat broth (or vegetable broth)
- 400 g ciabatta
- 1 tbsp fresh chopped basil
- 1 tsp fresh chopped thyme
- salt
- pepper (from the mill)
Instructions
- 1. Pour boiling water over the tomatoes.
- 2. Immediately shock the tomatoes with cold water.
- 3. Remove the skin from the tomatoes.
- 4. Cut the tomatoes into quarters.
- 5. Remove the seeds from the tomatoes.
- 6. Dice the tomato flesh into small cubes.
- 7. Peel the shallots.
- 8. Peel the garlic.
- 9. Slice the shallots into thin rings.
- 10. Finely chop the garlic.
- 11. Heat olive oil in a pot.
- 12. Add the shallots and garlic to the hot oil.
- 13. Sauté the vegetables for about five minutes until translucent.
- 14. Deglaze the mixture with the vegetable broth.
- 15. Let the soup simmer gently for about five minutes.
- 16. Remove the crust from the ciabatta bread.
- 17. Cut the bread into coarse cubes.
- 18. Add the bread cubes, herbs, and raw tomato cubes to the soup.
- 19. Let the ingredients steep in the soup for about five minutes.
- 20. Season the soup to taste with salt and pepper.
- 21. Serve the soup hot.
