🍲 Hearty Tomato-Onion Soup with Fried Meatballs

Ingredients
- 2 onions
- 1 garlic clove
- 800 g tomatoes
- 2 tbsp olive oil
- 800 ml vegetable broth
- 2 stems basil
- salt
- 1 pinch sugar
- cayenne pepper
- 1 slice toast bread (from the day before)
- 3 tbsp whipping cream
- 500 g mixed minced meat
- 1 egg
- 1 tbsp freshly chopped parsley
- 1 small tsp lemon zest
- salt
- pepper (from the mill)
- oil (for frying)
- whipping cream (for garnish)
Instructions
- 1. Peel the onions and the garlic.
- 2. Halve the onions and slice them into thin strips.
- 3. Finely chop the garlic.
- 4. Wash the tomatoes thoroughly.
- 5. Cut out the hard stem area at the top of the tomatoes.
- 6. Dice the tomatoes into small cubes.
- 7. Heat some oil in a pot.
- 8. Sauté the onion strips and garlic in it briefly until they are soft and translucent.
- 9. Deglaze the pot with the meat or vegetable broth.
- 10. Add the diced tomatoes to the broth.
- 11. Let the soup simmer gently over low heat for about 20 minutes.
- 12. Pour the cream over the toast bread.
- 13. Let the bread absorb the cream for a short time.
- 14. Place the minced meat in a large bowl.
- 15. Add the soaked bread to the minced meat.
- 16. Add the egg and the chopped parsley.
- 17. Finely grate the lemon zest and add it.
- 18. Season the mixture with salt and pepper.
- 19. Knead all ingredients thoroughly by hand.
- 20. Shape the mixture into small, uniform balls.
- 21. Heat some oil in a frying pan.
- 22. Fry the meatballs in the hot oil until golden brown.
- 23. This takes about 5 to 6 minutes.
- 24. Remove the balls from the pan.
- 25. Place them on kitchen paper to absorb excess fat.
- 26. Lift some tomatoes and onions out of the soup with a slotted spoon.
- 27. Set these aside for later.
- 28. Pluck the basil leaves from the stems.
- 29. Save a few nice leaves for decoration.
- 30. Add the rest of the basil to the soup.
- 31. Puree the soup finely with a hand blender.
- 32. Let the soup reduce a bit more if necessary.
- 33. If the soup is too thick, add a little more broth.
- 34. Return the previously removed tomatoes and onions to the soup.
- 35. Also add the fried meatballs to the soup.
- 36. Let everything heat through briefly.
- 37. Season the soup with salt, sugar, and cayenne pepper.
- 38. Divide the soup among the plates.
- 39. Garnish the plates with the reserved basil leaves.
- 40. Add a dollop of whipped cream if desired.
- 41. Serve the soup immediately while hot.
