🍽️ Classic Tomato Tortilla with Chives

Ingredients
- 150 g frozen broad beans
- Salt, pepper
- 1 bunch chives
- 6 eggs
- 30 g grated Parmesan
- 6 tbsp whipping cream
- 30 g butter
- 100 g cherry tomatoes
Instructions
- 1. Bring water to a boil in a pot and add a pinch of salt.
- 2. Cook the beans in the bubbling water for 3 to 4 minutes.
- 3. Drain the beans and squeeze the seeds out of the pods.
- 4. Cut the chives into fine rings.
- 5. Mix the eggs, Parmesan, cream, salt, and pepper in a bowl.
- 6. Add the chive rings and bean seeds to the egg mixture and stir well.
- 7. Preheat the oven to 180 degrees Celsius.
- 8. Heat the butter in a large pan.
- 9. Pour the egg mixture into the hot pan.
- 10. Let the mixture set at medium temperature for 2 minutes.
- 11. Add the tomatoes and bean seeds to the pan.
- 12. Place the pan in the preheated oven on the middle rack for 10 to 15 minutes.
- 13. Remove the tortilla from the pan and place it on a cutting board.
- 14. Cut the tortilla into strips and serve.
