  1. 1. Wash the tomatoes thoroughly and slice them. Sort the baby spinach, wash it as well, remove the thick stems and dry it well. Peel the onion and dice it finely.
  2. 2. Evenly distribute the spinach leaves and tomato slices onto two bowls.
  3. 3. Mix the vinegar with salt, pepper, honey and the onion cubes, adjust to taste and pour over the salad. Shave the goat cheese into thin slices and sprinkle over the baby spinach salad.
