🍽️ Colorful Spätzle with Zucchini and Sheep's Cheese

Ingredients
- 200 g Feta cheese
- 1 bunch Basil
- 250 g Wheat flour (Type 1050)
- Salt
- 3 Eggs
- 100 g Passata (Tetrapak)
- 2 tbsp Tomato paste
- 400 g small Zucchini (4 small Zucchini)
- 2 tbsp Rapeseed oil
Instructions
- 1. Drain the sheep's cheese in a sieve.
- 2. Grate the cheese on a coarse grater or slice it thinly.
- 3. Wash the basilica leaves under running water.
- 4. Shake the basil dry.
- 5. Pick the leaves off the stems.
- 6. Cut the basil leaves into thin strips.
- 7. Put the flour and half a teaspoon of salt into a mixing bowl.
- 8. Mix the flour and salt with a spoon.
- 9. Add the eggs to the flour mixture.
- 10. Stir the eggs into the mixture using the dough hooks of a hand mixer.
- 11. Add the tomatoes and tomato paste to the dough.
- 12. Mix everything into a smooth dough.
- 13. Fill a large pot two-thirds full with water.
- 14. Add salt to the water.
- 15. Bring the salted water to a boil.
- 16. Wash the zucchini under running water.
- 17. Cut off the ends of the zucchini.
- 18. Slice the zucchini into thin slices.
- 19. Heat the oil in a large frying pan.
- 20. Fry the zucchini in batches in the pan.
- 21. Fry the zucchini until golden brown.
- 22. Season the zucchini with salt while frying.
- 23. Fill the dough in portions into the container of a spätzle maker.
- 24. Place the spätzle maker directly on the edge of the pot.
- 25. Move the slider of the maker back and forth.
- 26. Cook the spätzle until they float to the surface.
- 27. Lift the finished spätzle out with a slotted spoon.
- 28. Layer the spätzle in a round baking dish with a diameter of 20 centimeters.
- 29. Add some zucchini on top of the spätzle.
- 30. Sprinkle the basil over it.
- 31. Add the sheep's cheese on top.
- 32. Place the baking dish in a preheated oven.
- 33. Keep the spätzle warm at 100 degrees Celsius.
- 34. Repeat the process with the remaining dough and ingredients.
- 35. Layer everything in the baking dish.
- 36. Serve the spätzle immediately.
