  1. 1. Blanch the tomatoes, peel off the skin, quarter them, remove the seeds, and chop roughly.
  2. 2. Thoroughly clean the bell pepper, halve it, remove the seeds, discard the white inner membranes, and chop roughly.
  3. 3. Rinse the arugula, clean it, shake it dry, and chop finely.
  4. 4. Add the tomatoes, bell pepper, and arugula together with the pesto, crushed ice, and tomato juice to the blender and puree thoroughly. Season with salt, pepper, and a few drops of Tabasco. Fill into glasses and garnish with Parmesan.
