Ingredients
- 2 ripe tomatoes (optionally peeled from the can)
- 1 red bell pepper
- 1 tbsp basil pesto (jar)
- 0.5 arugula
- 200 ml tomato juice
- 1 cup crushed ice
- salt
- pepper (from the mill)
- Tabasco
- grated Parmesan
Instructions
- 1. Blanch the tomatoes, peel off the skin, quarter them, remove the seeds, and chop roughly.
- 2. Thoroughly clean the bell pepper, halve it, remove the seeds, discard the white inner membranes, and chop roughly.
- 3. Rinse the arugula, clean it, shake it dry, and chop finely.
- 4. Add the tomatoes, bell pepper, and arugula together with the pesto, crushed ice, and tomato juice to the blender and puree thoroughly. Season with salt, pepper, and a few drops of Tabasco. Fill into glasses and garnish with Parmesan.
