🍽️ Fresh Tomato and Celery Relish

Ingredients
- 1 kg tomatoes
- 150 g celery stalks
- 2 tart apples (e.g. Boskop)
- 1 bell pepper
- 1 chili pepper
- 125 g sugar
- 80 ml wine vinegar
- 1 tbsp mustard seeds
- salt
- 0.5 tsp cinnamon powder
- 0.25 tsp clove powder
Instructions
- 1. Blanch the tomatoes briefly in boiling water to loosen the skin. Immediately rinse them with cold water. Peel off the skin. Cut the tomatoes into quarters. Remove the core. Roughly chop the flesh.
- 2. Clean the celery. Wash it thoroughly. Slice it into thin rounds.
- 3. Peel the apples. Cut them into quarters. Remove the cores. Dice the flesh finely.
- 4. Wash the bell peppers. Cut them in half lengthwise. Remove the core. Clean out the white inner membranes. Dice the peppers finely.
- 5. Wash the chili pepper. Cut it lengthwise. Remove the core. Clean out the white inner membranes. Dice the chili very finely.
- 6. Place all prepared ingredients into a wide pot. These include the tomatoes, celery, apples, peppers, and chili.
- 7. Add the sugar to the pot. Add the cider vinegar. Add the mustard seeds. Add 2 teaspoons of salt. Add cinnamon. Add cloves. Stir everything well.
- 8. Bring the mixture to a boil. Reduce the heat to low. Simmer the relish for approx. 1 hour. Stir occasionally. The mixture should become thick.
- 9. Rinse the jars with hot water. Fill the hot relish immediately into the warm jars. Seal the jars immediately.
- 10. The relish keeps for approx. 6 months.
