🍽️ Classic Tomato Quiche

Ingredients
- 100 g cold butter
- 200 g flour
- 1 pinch salt
- 1 egg
- 1 tbsp finely chopped basil
- 500 g cherry tomatoes
- 100 g whipping cream
- 100 g crème fraîche
- 2 eggs
- salt
- pepper (from the mill)
- nutmeg
- 1 tsp mustard
- 1 tsp grated lemon zest
- 60 g mozzarella (grated)
- 2 tbsp finely chopped basil
- 4 ramekins (12 cm ⌀)
- basil (for garnish)
Instructions
- 1. Preheat the oven to 200 degrees Celsius.
- 2. Quickly knead all the dough ingredients into a smooth dough.
- 3. Shape the dough into a ball.
- 4. Wrap the dough ball in cling film.
- 5. Chill the dough in the refrigerator for at least one hour.
- 6. Wash the tomatoes thoroughly.
- 7. Cut the tomatoes in half.
- 8. Whisk the cream with the crème fraîche.
- 9. Add the mozzarella and eggs to the cream mixture.
- 10. Season the mixture with salt, pepper, nutmeg, mustard, and lemon zest.
- 11. Stir the basil into the filling.
- 12. Roll out the dough on a floured surface.
- 13. Ensure the dough is about three to four millimeters thick.
- 14. Cut out four circles the size of your molds.
- 15. Line the molds with the dough circles.
- 16. Pour the egg-cream mixture into the lined molds.
- 17. Place the tomato halves into the liquid with the cut side facing up.
- 18. Bake the quiches for about 30 minutes in the preheated oven.
- 19. Carefully remove the finished quiches from the molds.
- 20. Serve the quiches on plates.
- 21. Garnish the dishes with fresh basil.
