  1. 1. Preheat the oven to 200 degrees Celsius.
  2. 2. Quickly knead all the dough ingredients into a smooth dough.
  3. 3. Shape the dough into a ball.
  4. 4. Wrap the dough ball in cling film.
  5. 5. Chill the dough in the refrigerator for at least one hour.
  6. 6. Wash the tomatoes thoroughly.
  7. 7. Cut the tomatoes in half.
  8. 8. Whisk the cream with the crème fraîche.
  9. 9. Add the mozzarella and eggs to the cream mixture.
  10. 10. Season the mixture with salt, pepper, nutmeg, mustard, and lemon zest.
  11. 11. Stir the basil into the filling.
  12. 12. Roll out the dough on a floured surface.
  13. 13. Ensure the dough is about three to four millimeters thick.
  14. 14. Cut out four circles the size of your molds.
  15. 15. Line the molds with the dough circles.
  16. 16. Pour the egg-cream mixture into the lined molds.
  17. 17. Place the tomato halves into the liquid with the cut side facing up.
  18. 18. Bake the quiches for about 30 minutes in the preheated oven.
  19. 19. Carefully remove the finished quiches from the molds.
  20. 20. Serve the quiches on plates.
  21. 21. Garnish the dishes with fresh basil.
