🍕 Crispy Pizza with Tomato, Mozzarella, and Anchovies

Ingredients
- 250 g flour (double-grind flour)
- 20 g fresh yeast
- 0.125 l lukewarm water
- salt
- 3 tbsp olive oil
- 500 g tomatoes
- 2 tbsp olive oil
- 1 tsp oregano
- salt
- pepper (from the mill)
- 2 garlic cloves
- 200 g mozzarella
- 8 small anchovy fillets (anchovies in salt)
- 1 tsp small capers
- 1 tsp pine nuts
Instructions
- 1. Place the flour in a large bowl and make a well in the center.
- 2. Crumble the yeast and mix it with a small splash of water.
- 3. Pour the yeast mixture into the well and dust it lightly with flour.
- 4. Cover the bowl and let it rest for 15 minutes to activate the yeast.
- 5. Now add the remaining water, salt, and oil.
- 6. Knead everything into a smooth and elastic dough.
- 7. Cover the dough and let it rise in a warm place for about one hour.
- 8. Wait until the volume of the dough has almost doubled.
- 9. Pour hot water over the tomatoes and let them sit for a short moment.
- 10. Shock the tomatoes with cold water to make peeling easier.
- 11. Remove the skin from the tomatoes and cut them into small cubes.
- 12. Place the tomato cubes in a pot with one tablespoon of oil.
- 13. Simmer the tomatoes over high heat for about five minutes.
- 14. Season the tomato mixture with oregano, salt, and pepper.
- 15. Finely chop the garlic and stir it into the tomatoes.
- 16. Rinse the anchovy fillets briefly and pat them dry carefully.
- 17. Slice the mozzarella into even slices.
- 18. Lightly grease a pizza pan with oil.
- 19. Knead the dough briefly once more to release the air.
- 20. Roll out the dough and place it in the prepared pan.
- 21. Spread the tomato mixture evenly over the dough.
- 22. Place the mozzarella slices on top.
- 23. Distribute the anchovy fillets evenly over the pizza.
- 24. Sprinkle capers and pine nuts over the top.
- 25. Drizzle the remaining olive oil over the pizza.
- 26. Preheat the oven to 250 degrees Celsius.
- 27. Bake the pizza in the hot oven for 12 to 15 minutes.
