  1. 1. Dissolve the yeast in 200 milliliters of lukewarm water.
  2. 2. Stir the sugar into the yeast water mixture.
  3. 3. Add the flour, the olive oil, and the salt.
  4. 4. Knead the ingredients into a smooth dough.
  5. 5. Cover the dough and let it rise in a warm place for one hour.
  6. 6. Divide the dough into four equal pieces.
  7. 7. Grease the pizza pans with a little oil.
  8. 8. Dust a work surface with flour.
  9. 9. Roll out each piece of dough into a round shape.
  10. 10. Place the dough bases into the prepared pans.
  11. 11. Press a small rim up at the edge of the dough.
  12. 12. Let the tomatoes drain well.
  13. 13. Mash the tomatoes into a puree with a fork.
  14. 14. Spread the tomato mixture evenly over the dough bases.
  15. 15. Slice the mozzarella into thin slices.
  16. 16. Place the mozzarella slices on the tomato sauce.
  17. 17. Season the pizzas with salt, pepper, and herbs.
  18. 18. Pluck the rosemary needles from the stems.
  19. 19. Sprinkle half of the rosemary needles over the pizzas.
  20. 20. Crumble the chili pepper finely.
  21. 21. Sprinkle the chili flakes over the pizzas as well.
  22. 22. Drizzle a little olive oil over the toppings.
  23. 23. Preheat the oven to 225 degrees.
  24. 24. Bake the pizzas in the oven for 15 minutes.
  25. 25. Garnish the finished pizzas with the remaining rosemary.
